This is a popular Chinese dish in Singapore and Malaysia.
Ingredients
Serves: 8

    1.5 kg whole chicken
    8 cloves garlic
    2.5 cm ginger, sliced
    1 onion, halved skin on
    Salt and white pepper to taste
    Water for boiling
    Ice bath
    For the rice :
    3 cups long grain rice
    1.5 cm ginger, sliced
    5 cloves garlic, sliced
    5 pandan leaves, knotted
    Chicken broth
    Salt to taste
    2 teaspoons oil
    For the dipping sauces :
    3 fresh red chillies
    Salt to taste
    Juice of 1 lime
    4 cloves garlic
    1 slice ginger
    Garnishing :
    1 medium cucumber, peeled and sliced
    1 tomato, sliced
    1 tablespoon (15ml) light soya sauce
    1 teaspoon (5ml) sesame oil
    Lettuce leaves
